Lemon Cake - very good

cake

yolks of 4 eggs & whites of 2
1 cup sugar
5 tablespoons cold water
1 teaspoon lemon extract
1 scant cup flour
1 leavel teaspoon baking powder

Beat the yolks of eggs and sugar till light and thick

add the cold water and extract,

then flour and baking powder sifted together.

As soon as these are mixed smoothly

fold in gently the stiffly-beaten whites of eggs and

bake in greased layer-cake pans in moderate ove.

Cool oven 250°F
Slow oven 250–350°F
Moderate oven 350–375°F
Hot oven 375–450°F
